from the Chattz website – Early each morning, we’ll fire up our roaster, throw in our first bucket of raw coffee, and open the doors to our Chattanooga friends, both old and new. You’ll smell the coffee as it warms and turns from green to golden brown. Then, we’ll brew up a cup just for you – specially prepared to order on our new Rail or pulled one shot at a time to create your favorite espresso drink.
thoughts – The flavor of coffee is dependent on two primary factors, the origin of the bean and the roasting process/technique. This combination determines the flavor category of each coffee, i.e., “light & subtle”, “rich & smooth”, or “dark & bold”, each being very distinctive.
While the origin will influence the look, taste and smell of coffee, the roast degree with influence the experience, i.e., cup of joe. As the coffee is roasted darker, it’s origin begins to to take a “back seat”…as the roast progresses, the heat intensifies the flavor by caramelizing the bean. This adds a new dimension to the flavor and aroma that is typically not present early in the roasting process. The coffee roaster is an artist and will determine the flavor, aroma and intensity of the finished product.
